We hope to provide our customers with the supreme experience of "beautiful and refined" Japanese cuisine, experienced with all five senses

After honing his skills at traditional Japanese restaurants in Ishikawa prefecture, in 2015 he became the head chef of "Ichinomatsu" Kanazawa Branch when it opened.
In order to give you a full sense of Japan's four seasons, we pay close attention to teach seasonal juncture when preparing our menu for each season.
We hope to convey to you the local food culture of Kanazawa through our cuisine.
Our seasonal cuisine is filled with the skill and spirit of Japanese cooking, making full use of seasonal ingredients.
We hope to use our accumulated skill and carefully selected ingredients to create heart-felt cuisine to please all of our customers so that everyone, whether from the city or nearby, will think "Ichinomatsu" when they think of Kanazawa.
